Merkén or merquén is a smoked chili pepper used as a condiment that is often combined with other ingredients when in ground form. Merkén is a traditional condiment in Mapuche cuisine in Chile. It is made from native “Cacho de Cabra” (goat's horn) chili pepper, toasted coriander and salt. This combination of flavors and techniques create a smoky and rich flavor. Yes, you can grow the peppers at home, but the technique of smoking the peppers to get the very unique flavor is bothersome. If you have smelled and used Merken, then you already know what an amazing ground chili powder this condiment is!
Fast snacks:
A simple but delicious way to enjoy as a condiment. For example, sprinkle on scrambled eggs on toast (with a bit of mayonnaise)!
A favorite in Valparaiso is to mix it into peanut butter! See photo of a Sopaipilla doble with peanut butter spiced up with Merkén!
Great on scrambled eggs (on toast, in photo), on pizza, on top of your potato salad, mixed into egg salad or mashed potatoes.
Sprinkled it on falafel!
The aroma is best when it is added on top of your dish. If you mix it in while cooking or after cooked, you won't the same aroma, but you will get flavor! It is a bit spicy for some people, but not any more spicy than cayenne pepper so if you know how much you can take with cayenne, just follow the same rules with the Merken!
